Country Fair Prize Pie Crust


4 cups (1000 mL) all-purpose flour
1-1/2 cups (375 mL) cake and pastry flour
1 tsp (5 mL) salt
1 tsp (5 mL) baking powder
1/2 lb (225 g) shortening

1/2 lb (225 g) lard
1 egg
1 tbsp (15 mL) maple syrup
2 tbsp (30 mL) apple cider vinegar (if possible milder)
1 cup (250 mL) cold water, to moisten

Directions: Using a fork to toss, mix dry ingredients well. Cut in shortening and lard with pastry blender, to size of peas. Beat together vinegar, egg and maple syrup. Add cold water to make 1 cup liquid. Toss together wet and dry mixtures, till all mixture is damp. Shape into 5 equal balls. Avoid touching pastry too much. Wrap in plastic and place in refrigerator what you are not going to use. Recommended for our Country Fair Apple Pie.
