Maple Drizzled Apple Muffins


1-1/3 cups (325 mL) all-purpose flour
1 cup (250 mL) rolled oats (oatmeal)
1/2 cup (125 mL) white sugar
1 tbsp (15 mL) baking powder
1-1/2 tsp (8 mL) ground cinnamon
1/2 cup (125 mL) milk
1/3 cup (75 mL) margarine, melted

1/4 cup (50 mL) maple syrup
2 egg whites, slightly beaten
1 cup (250 mL) chopped apple
Pecan halves (optional)
Glaze: (optional)
3 tbsp (45 mL) powdered sugar
1 tbsp (15 mL) maple syrup

Directions: Heat oven to 400°F. Line muffin cups with baking cups or spray with Pam. Combine first 5 dry ingredients in large mixing bowl. Mix well. Add milk, margarine, maple syrup and egg whites, mixing just until moistened. Gently stir in apples. Fill cups almost full. Top with pecan halves. Bake for 18 to 20 minutes. Glaze: Blend together sugar and syrup until smooth. Drizzle over baked muffins.
