Mapleside Sugar Bush

Sugar Bush Cocoa


2 cups (500 mL) scalded milk
2 tbsp (30 mL) cocoa
2 tbsp (30 mL) maple syrup

2 cups (500 mL) boiling water
1/8 tsp (.5 mL) salt (optional)

Scald milk. Mix cocoa, maple syrup and boiling water slowly. Boil gently for 5 minutes, stirring constantly. Add milk. Beat with rotary beater before serving until light and foamy. Serves 2.
